Vietnamese people prepare a wide variety of food for Tet (the Vietnamese Lunar New Year). This dish, called Thịt Kho Tàu (caramelized pork and eggs braised in coconut juice), is one of the most popular traditional food served during Tet in southern Vietnam.
It's a slow-cooked dish with the sweet flavor of coconut juice and a beautiful caramel color. It is as comforting as it is easy to make. It's great with pickled veggies!
Ingredients:
- 2.5 lbs pork belly, cut into 1″ x 2″ pieces
- 3 eggs, hard boiled, peeled
- juice from 2 young coconuts
- ¼ cup sugar
- ¼ cup of fish sauce
